6 OZ semi sweet Chocolate
1/4 cup marshmello creme
1 1/2 oz unsweetened chocolate
1/2 tsp peppermint extract
1 1/2 c sugar
3/4 c sweetened condensed milk
1/3 cup water
1/3 cup whipping creme
1/4 cup unsalted butter
line 9x5 pan loaf pan with foil, overlapping the sides. Put first 4 ingredients in bowl. Mix sugar, milk, water,whipping creme and butter in sauce pan over medium heat until sugar dissolves. Bring heat to high; rolling boil. Reduce heat to medium. Stir slowly with a wooden spoon until thermometer reads 232 abt 9 min. Pour boiling ingredients over mixture in bowl, do not scrape pan, stir vigorously until chocolate melts and thickens about 2 min. Immediately pour into prepared pan. Refrigerate until firm about 2 hrs. Cut. Can be made 1 week ahead.

Irish Side DIsh
Fry Bacon & Sausage in pan, save drippings
Line Rectangle Pan with sliced potatos and Sliced onions (alternate)
Top with part bacon & sausage
Cover with more potatoes and onions
top with rest of meat
cover with more potaotes and onions
pour drippings over, cover
Bake at 350 for 30 min

A side dish - Peas & Bacon
Here is a side dish - looks hard but isn't:
Fry some bacon up crunchy, remove from pan, saute up some chopped onion. Now add a bunch of peas (frozen, canned, or fresh (if fresh cook first))
Heat the peas until warm, crumble bacon and throw back into pot. Serve with pretty much anything.

Valentines Day Picnic
So what are your plans for Valentines Day? Expensive dinner out?? Well hell with out! The new "in" thing, the new romantic thing, is to stay IN.
Plan a picnic for two, light some candles, put out a blanket, you can get a bottle of good wine for less then $10 - $15, and make a salad or a fun selection of finger foods you can feed each other.
I suggest crackers, cheese, grapes (always a favorite), chocolate, maybe splurge and get some strawberries, mango's. Put on your best soft jazz music (at a loss for music, don't buy a CD. Try playlist.com a FREE music website) and treat them to a wonderful evening that won't cost you an arm and a leg.... when things get a little hot and heavy no worries, the blankets already on the floor. Careful of the candles!
